Hierophant Meadery Part 2 of our 3 part series, where Mark and I are tasting Hierophant’s Lemon Balm mead and their Lavender Citrus mead.
Lemon Balm mead…a light bodied, brightly acidic mead brings forward the citrus and herbaceous notes of lemon balm. Fresh harvested Melissa from Foothill Farm in Colbert, WA is layered over a standard infusion of dried leaves to produce a full-spectrum extraction of the plant’s flavors. A subtle addition, this mead is a natural over ice on a summer’s day.
Lavender Citrus mead…celebrating the joys of summer, this metheglin uses culinary lavender. Light, bright, and floral this mead exhibits the faintest touch of sweetness which brings out floral lavender paired with two types of citrus zest. This mead is an excellent choice where a drier, lemony white would normally be preferred.
These are some beautiful looking and amazingly complex tasting metheglins! No wonder they are award winners!
